The color is lightly intense red, reminiscent of pomegranate seeds. Aromas of ripe red fruits especially cherry with hints of rose petals. Freshness and balance on the palate with subtle tannins, pleasant acidity and long aftertaste.
Cretan delicacies such as snails, 'Sfakiani' pie, 'kaltsounia', and salads.
Served at 10 - 12 °C.
The family vineyards 'Pezoula Tiri' and 'Pefki' in Kato Asites, Heraklion, Crete.
Altitude: 350-550m. Soil: Calcium-clay, limestone.
Harvest: September. Yield: 60-70 hl/ha.
Age of vines: 10 years (average).
Agriculture: Integrated farming.
Separate vinification for each grape variety, alcoholic fermentation at a controlled temperature of 16 °C. Prior to bottling, a 3-month maturation is performed on its fine lees. Acidity: 5.9 g/L TA, pH: 3.43, Residual sugar: 0.3 g/L.
