Duck, rooster with homemade pasta and tomato sauce, game birds. Served at 16-18 °C.
The privately owned vineyards on the southeast slopes of Olympus, in an area called 'Prosilia Rapsani'.
Soil: calcareous, rich in organic materials.
Harvest: End of October. Yield: 50-60 hl/he.
Age of vines: 25 years.
Classic red vinification method. Maturation in French and American oak barrels for 12 months and further ageing in bottle for 12 months. Acidity: 6.5 g/L TA, Residual sugar: 2.1 g/L.
