Intense deep red colour with brown reflections. Concentrated aromas of dry plums, raisins and spices. Rich body, thick texture and a long sweet aftertaste.
Cheesecake, dried fruits, light desserts.
Served at 8-10 °C.
Selected hillside vine plantings of low yield in Paros Island.
Soil: Sandy-argillaceous, poor and dry.
Harvest: End of September. Yield: 30-40 hl/he.
Age of vines: 25 years(average).
Sun drying of the grapes for 18 days next to vineyards site. Long fermentation for 3 weeks. Maturation in oak barrels over a period of 4 years. Acidity: 6.5 g/L TA, Residual sugar: 180.0 g/L.
