Pale white yellow colour with green reflections. Lightly scented white flower, green grass and quince nose. Crunchy stone fruit, lemon zest and delicate salty hints on the lovely finish.

Fish, seafood, light cheese, light dishes, green salads.
Served at 10-12 °C.
The privately owned vineyard at Ysterni, Paros Island.
Altitude: 10-100m.
Soil: Sandy-argillaceous, poor and dry.
Harvest: Early August. Yield: 60-65 hl/he. 
Age of vines: 12 years(average).
Agriculture: Mild.
Classic vinification process for white wines, fermentation in stainless steel vats at a controlled temperature of 16 °C.
Acidity: 5.7 g/L TA, Residual sugar: 1.0 g/L.
