Crystal-clear yellowish colour. Rich aromas of citrus, with a hint of herb and tropical fruit displayed. Round on the palate, with crispy and sparkling acidity that gives nerve. Clean and fresh finish.
Light cheeses, green salads and pasta.
Served at 10 - 12 °C.
The mountainous vineyards in Omala Valley, Cephalonia Island. Extremely low yields.
Soil: limestone, rocky, barren.
Harvest: End of August - September.
Yield: 30-35 hl/ha. Age of vines: 35 years (average).
Classic white vinification process. Fermentation in stainless steel vats at controlled temperatures of 15-17 °C, approx. 25 days. Acidity: 5.3 g/L TA, Residual sugar: 1.5 g/L.
