Crystal-clear yellowish colour. Strong complex flavour, full of grapefruit, floral and honey. Round on the palate, balanced nicely by the crisp acidity and delivering a clean, persistent, fresh finish.

Ideal for matching with dishes of intense flavour, such as grilled fish with garlic, olive oil, lemon, basil and oregano, or exotic cuisine.
Served at 10 - 12 °C.
Origin Origin
The mountainous vineyards in Omala Valley, Cephalonia Island. Extremely low yields.
Altitude: 500-800m.
Soil: limestone, rocky, barren.
Harvest: September.
Yield: 30 hl/ha. Age of vines: 35 years (average).
Agriculture: Mild.
Vinification Vinification
Classic white vinification process. Fermentation in stainless steel vats at controlled temperatures of 15-17 °C, approx. 25 days. Acidity: 5.1 g/L TA, Residual sugar: 1.3 g/L.
