A classic benchmark of the variety and its homeland. Salted yellow citrus and a flash of white flowers on the nose. The palate is chalky and mineral, with an elegant, silky texture.

The vineyards in Pyrgos and Imerovigli villages, Santorini Island, Cyclades.
Altitude: 30-380m. Soil: volcanic and dry.
Harvest: Handpicked, Mid-August.
Yield: 30 hl/he.
Age of vines: 40 years in average(basket-shaped).
Classic white vinification. Destemming, skin contact for 6 hours. Gentle pneumatic press. Fermentation temperature at 16-17 °C. Conservation in stainless steel tanks. Acidity: 6.2 g/L TA, pH: 3.05, Residual sugar: 3.8 g/L.
