Organoleptic Organoleptic
From very old vines and aged in French barriques for 12 months, it features a golden colour and a huge bouquet of toast, peach, bay leaf, honey, golden apple, spice, resin and white flowers. The crystalline and saline acidity of Assyrtiko carry a long finale.

Smocked yellow cheese, 'Ladotyri' cheese, fish and seafood. Served at 10 - 11° C.
Origin Origin
The vineyards in Akrotiri village, Santorini Island, Cyclades.
Altitude: Up to 300m. Soil: volcanic and dry.
Harvest: Handpicked, Early August.
Yield: 30 hl/he.
Age of vines: 90 years in average(basket-shaped).
Agriculture: Mild.
Vinification Vinification
Skin contact method is applied for 6- 8 hours, in low temperature. Fermentation temperature at 16-17 °C. At the beginning of the fermentation, the must is filled in oak barrels for the completion of the fermentation. Maturation for 12 months in oak barrels and ageing for 12 months in the bottle. Acidity: 6.1 g/L TA, pH: 3.11, Residual sugar: 3.8 g/L.
