Deep lemon color, with golden highlights. The nose is vibrant with oaky elements reminiscent of vanilla, followed by citrus fruits on the background. Dry, with refreshing acidity and the classic Assyrtiko’s minerality. Oak flavors are well integrated with elegant citrus fruitiness on the palate. Persistent, long finish.
Perfect company for Greek and European cuisine based on fish and sea food. Served at 10 - 11° C.
The vineyards in Pyrgos and Imerovigli villages, Santorini Island, Cyclades.
Altitude: 30-380m. Soil: volcanic and dry.
Harvest: Handpicked, Mid-August.
Yield: 30 hl/he.
Age of vines: 40 years (average), basket-shaped.
Classic white vinification. Destemming, skin contact for 6 hours, gentle pneumatic press. Fermentation temperature at 16-17 °C. At the beginning of the fermentation, the must is filled in oak barrels for the completion of the fermentation. Maturation for 6 months in oak barrels and ageing for 6 months in the bottle. Acidity: 6.12 g/L TA, pH: 3.11, Residual sugar: 3.3 g/L.
