Organoleptic Organoleptic
Traditionally Assyrtiko and a dash of Aidani and Athiri grapes were pressed the night after their harvest in order to give the famous Nykteri. A yellow lemon color of medium+ intensity with golden hues. The nose is scented with vanilla and oaky aromas suggesting barrel treatment, followed by elegant notes of citrus and green fruits. Dry on the palate with lively acidity and complex oaky flavors paired with the fruity character. The aftertaste is long and intense.

Matches perfectly with appetizers, seafood, Greek salads based on extra virgin olive oil and feta cheese. Served at 10 - 11° C.

The vineyards in Pyrgos and Imerovigli villages, Santorini Island, Cyclades.
Altitude: Up to 450m. Soil: volcanic and dry.
Harvest: Handpicked, Mid-August.
Yield: 30 hl/he.
Age of vines: 40 years in average(basket-shaped).
Agriculture: Mild.
Vinification Vinification
Classic white vinification. Destemming, skin contact for 6 hours, gentle pneumatic press. Fermentation temperature at 16-17 °C. At the beginning of the fermentation, the must is filled in oak barrels for the completion of the fermentation. Maturation for 9 months in oak barrels(1st – 2nd fill). Acidity: 6.12 g/L TA, pH: 3.15, Residual sugar: 3.3 g/L.
