Yellow colour with golden hues. Complex nose, with aromas of ripe citrus, honeysuckle, nuts and minerality. Excellent structure, with an acidity which brings the flavours to the fore, and some residual sugar that gives a special character to Nychteri.
Fatty fish, smoked cheese, duck in orange sauce, stew with white sauce. Served at 10 - 11 °C.

Altitude: 100-350m. Soil: Volcanic and dry.
Harvest: Handpicked, Mid-August.
Yield: 30 hl/he.
Age of vines: Over 50 years.
Traditionally, Assyrtiko grapes were pressed the night after their harvest in order to give the famous Nychteri. The fermentation and ageing take place in old, oak barrels and on the lees for 30 months. Nychteri is released in the Market after 3 years.
