Bright gold and blonde colour. Gentle aromas of candied citrus and sea salt. Tension and grip on the palate with a discreet presence of oak. A silky and voluptuous texture fills the mouth while remaining crisp and bright.
Oily fish, lobster spaghetti, smoked salmon. Served at 11 - 12 °C.
The vineyards of Santorini Island, Cyclades.
Altitude: 100-350m. Soil: volcanic and dry.
Harvest: handpicked, Mid-August.
Yield: 30 hl/he.
Age of vines: Over 50 years.
Fermentation in French oak barrels, where the wine remains for 6 months and matures on its fine lees. Acidity: 7.2 g/L TA, Residual sugar: 1.7 g/L.
